Mixed vegetable
I love winters for many reasons , one of them is
because the season brings a wide variety of
colourful and delicious vegetables.Here is one
of the many ways to eat as many vegetables in
one go.
Ingredients:
1. 2 cups peas
2. 2 cups cauliflower florets
3. 2 cups carrots cubed
4. Two medium onions sliced thin
5. 2 small potatoes chopped into small cubes
6. 2 cups chopped fenugreek leaves ( methi)
7. ¾ teaspoon Kashmiri red chilly powder
8. ½ teaspoon turmeric powder
9. 2 teaspoons salt or to your taste
10. 2 level teaspoons coriander powder
11. 5 tablespoons refined oil
12. ½ teaspoon garam masala
Method:
1. Take oil in a heavy bottomed pot and when it gets warm add the sliced onions.
2. The moment they pinken, add turmeric , coriander and red chilli powders and stir for a minute.
4. Toss the vegetables in between and sprinkle a little water if you feel that the moisture is less.
5. When the vegetables are almost done , take the cover off and add the chopped fenugreek leaves and the salt to taste and toss the vegetables intermittently for five minutes till the fenugreek leaves and the rest of the vegetables are completely cooked.
