Simplest Egg Fried Rice

There are numerous variations to this ever favourite recipe, many of which will taste a lot better than this one,true. But I go in for the simplest one  with as less effort especially due to the fast life today. One would always find these ingredients at home quite easily so that the day you want to have something healthy and be able to cook it in a jiffy you can choose to make this one.Hope you would enjoy it.
       Its been a month since I opened my blog with this first ever recipe and when I saw the snap I cringed .But I am not going to remove it....it will stay right here as I am sentimental about it.I know the egg fried rice that you make looks a lot better than this one...but this one stays ...I will make another fried rice with some variations ...take great snaps and put it up on the blog.....but this one reminds me of the day when I took up the challenge of opening a blog of my own and on my own.

Ingredients

  1. 3 cups chilled leftover rice (one that u use on a daily basis with your dals and curries.)
  2. One medium onion sliced long and thin.
  3. 3 medium tomatoes with seeds removed and chopped fine.
  4. Two capsicums with seeds removed and chopped fine.
  5. Finely chopped garlic (to your taste)..I love garlic so I used about 12 small cloves ( Half inch each). 
  6. Two inches ginger grated fine and any leftover shreds discarded.
  7. Three large eggs or four small ones.
  8. Salt and pepper to taste.
  9. Two/ Three tablespoons groundnut oil or any regular oil...even butter is fine.
  10. Half a  cup of chopped coriander leaves or three tablespoons of chopped celery.

Method

  1. In a non stick( preferably) flat pan pour in the oil.
  2. Add the garlic and stir till slightly golden.
  3. Add the grated ginger and stir for a minute or two.
  4. Drop in the capsicum, tomatoes and onions and stir fry on medium flame till they remain crispy yet are very slightly cooked.
  5. Take it off the gas and tranfer the vegetables into another bowl.
  6. In the same pan scramble the eggs without adding any water or oil , but dont dry them too much..they should be  pleasant yellow clumps.
  7. To this add the vegetables ,the rice and coriander leaves and season with salt and pepper.
  8. Mix well and toss it well while reheating  for a few seconds and  serve hot.
