Desi (Local) Potato Scones
The scone is a small British quick bread tradionally hailing from Scotland .Potato scones are most commonly served fried in a full Scottish breakfast . There are many regional variations and this one in my own tried and tested version. I hope you all enjoy them as my family and friends do.
Ingredients
1. 300 grams or three medium potatoes.
2. ¾ cup all purpose flour.
3. 3 tbsp refined oil or olive oil.
4. Half cup chopped coriander leaves or mint leaves.
5. Half a teaspoon roasted cumin powder.
6. Half a teaspoon chat masala.
7. One tsp black pepper powder or ¾ tsp of red chilli powder whichever you prefer or alter it to your taste.
8. Salt to taste.
Method
1. Boil the potatoes in a pressure cooker till done and mash them well the moment they are at room temperature. You could use a potato masher for this.
2. Add all the ingredients and mix to a soft dough.
3. Roll out the dough on a well floured surface to a thickness of ¼ inch.
4. Take a 2 inch pastry cutter and stamp out rounds.
5. Preheat a fry pan or even a tava would do.
6. Lightly grease it and on medium flame cook the scones on both the sides while pouring in a gentle swirl about one tbsp. of oil to a batch of five scones. Oil can be reduced or increased to your personal liking.
7. Serve hot with mint chutney or tomato ketchup.
