Chatpate Aloo
The thing that I love about this recipe is that it can literally be made in a jiffy especially if you have leftover boiled potatoes in your fridge and even if you don't it might take two jiffies.I have often served it in the main course whenever I have entertained friends at home and the potatoes have been polished off each time. And every Indian home has all the simple ingredients required to make this simple stir fry.
You could serve it with pooris, rotis ,rice or even make stuffed and grilled sandwiches with them...just break the potatoes into smaller pieces with a masher.Try it and don't forget to write your comments on the blog.
Ingredients
1. 8 medium sized potatoes boiled and cubed about 800 grams
2. ½ tsp turmeric powder
3. 1 teaspoon coriander powder
4. 1 teaspoon Kashmiri red chilly powder
5. Salt to taste
6. ¼ teaspoon garam masala
7. 4 tablespoons oil
8. 1 teaspoon cumin seeds
9. ½ teaspoon chat masala
Method
1. Warm oil in a heavy bottomed pan and add cumin seeds and stir for a minute.
2. Add all the dry masalas viz turmeric, red chilly and coriander.
3. Stir fry for half a minute and add the cubed potatoes and toss to coat the masala well.
4. Season with salt , garam masala and chat masala.
5. Can garnish with fresh coriander leaves.
Goes well with a combination of pooris with boondi raita.

ReplyDeleteHi Richa, I am glad that you find them appealing and may I add that this is the original colour as I have a very basic Nikon camera and I have neither the knowledge nor the patience to edit the pictures...plus I want my food to look real and not something which my viewers would look and say ...I dont think I can make this one from the look of it.
ReplyDeleteyes you can certainlt try the gobi in this manner, but boil the cauliflower or better still steam it in a vegetable steamer or maybe keep it on a strainer with large holes and place it on top of boiling water.Boil the cauliflower florets only till they remain pleasantly crunchy. And I would also suggets adding a dash of ginger garlic paste.
All I want to tell you is....cant think of an easier way to make potatoes....Put in some more of potato recipes...I am sure they are a favourite among many people. Mridula Shankar
