Whole Wheat and Chocolate Chips Shortbread
Shortbread is generally associated with and originated in Scotland. In Shetland, it is traditional to break a decorated shortbread cake over the head of a new bride on the entrance of her new house.
Shortbread is crumbly before cooled, but becomes firmer after cooling.
Ingredients
1. 100 grams regular salted butter.
2. 125 grams sugar.
3. 200 grams whole wheat flour.
4. ¼ cup (approx) chocolate chips.
Method
1. Mix the butter and sugar with a wooden spoon or with your hand.
2. Add the whole wheat flour and gently rub in the mixture with your fingers so that they bind well.
3. Add the chocolate chips and press down the mixture into a 9 inch round tin, pressing gently with your hand to level it out.
4. Prick a few times with the fork.
5. Place in a preheated oven. Bake at 180° C and for 25 minutes.
6. The moment you take it out of the oven cut around 15-16 wedges.
7. Let them cool and then remove them from the tin and enjoy your shortbread.
