The New Stuff


AALOO GOBI
(STIR FRIED POTATO AND CAULIFLOWER)



Ingredients

1.           Two large potatoes cubed.
2.           One medium cauliflower cut into florets almost the same size as the    cubed potatoes.
3.           One cup fenugreek or methi leaves.
4.           One large onion sliced thin.
5.           One tablespoon ginger garlic paste.
6.           ¼ teaspoon turmeric powder.
7.           One level teaspoon coriander powder.
8.           One green chilli or according to your taste.
9.           1 ½ teaspoon salt or according to taste.
10.       ¼ teaspoon garam masala.
11.       4-5 tablespoons oil.

Method

1.           Take oil in a heavy bottomed pan and add the sliced onions.

2.           Stir fry on medium flame till they turn pink.
3.           Add the ginger garlic paste and the finely chopped green chilli and stir fry for about two minutes.
4.           Add the dry masalas and stir fry for a minute.
5.           Add the potatoes and cauliflower and cover and let cook till almost done on a low flame while stirring and gently tossing the vegetables in between two or three times.


6.           Check the potatoes if they are almost done by slicing it with the spatula.
7.           Add the finely chopped fenugreek leaves and salt and stir fry for about five minutes or more on low flame till the potatoes and fenugreek are cooked completely.



8.           Sprinkle the garam masala and serve hot.
